    Prepare the Bitterleaf

    • Boil water in a pot• Add the bitterleaf and boil 10-15 minutes• Drain and rinse with cold water.• Wash and squeeze repeatedly until bitterness reduces• If using dried bitterleaf, soak first, then boil and wash

    Cook the Meat & Fish

    • Wash meat and put into a pot• Add salt, 1 seasoning cube, half sliced onion, and 3 crushed garlic cloves.• Add enough water just to cover• Cook until very soft and tender• Add smoked fish in the last 10 mins of the boil.• Reserve the stock (very important for flavor).

    Cook Your Groundnuts ( Peanuts )

    • In a separate pot, add your properly washed groundnuts, a pinch of salt, and water to cover.• Boil until the groundnut becomes soft.• Allow to cool, then blend/grind to form a paste.• Add water to a pot of your paste and stir to avoid lumps.• Cook on medium heat, stirring often.• Cook until thick and the oil starts to separate slightly.• Add some meat stock for flavor, along with your white pepper and black pepper

    Combine Groundnut Paste and Meat

    • Add the cooked meat, fish, and stock into the pot with groundnut paste.• Stir well and let it simmer for about 10-15 minutes

    Add Bitterleaf

    • Add the washed bitterleaf gradually, stirring properly as you add.• Allow to simmer 15-20 minutes,

    Add Vegetable Oil and Shrimp

    • In a skillet, add some vegetable oil and start heating up.• Add your shrimps, and the remainder of your chopped onions to the skillet. Allow to properly fry, until the shrimp becomes a light brown.• Optionally, you can grind and add dried crayfish to the oil as well.• Pour the oil and content over the Ndole and allow to simmer for 10 minutes. Stir properly and taste.

    Serve With

    • Boiled Ripe or unripe plantains• Fried ripe plantains ( Dodo )• Rice• Garri• Miondo / Bobolo• Sweet Potatoes or Yams
