    • Pour wet ingredients into the dry• Mix gently until just combine, small lumps are okay.• DO NOT OVERMIX ( this keeps the pancakes fluffy )• Let the batter rest 5 - 19 minutes

    • Heat a non-stick pan or griddle on medium heat• Lightly grease with butter or oil• Pour about 1/4 cup batter per pancake• Cook until bubbles form on the surface and the edges look set• Flip and cook another 1.5 minutes until golden
