    Season & Boil The Beef

    • Wash beef and place in a large pot• Add 2 chopped onions, 2 seasoning cubes, 1 tsp salt, and half or the garlic and ginger blend.• Add a little water, cover and cook on medium heat until beef is very tender.• Reserve the meat stock as we will use for our stew.

    Prepare The Tomato Base

    • Blend together fresh tomatoes, remaining onions, remaining garlic and ginger, and the fresh pepper.• Heat vegetable oil in a large pot on medium heat.• Add tomato paste and fry 5-7 minutes while stirring.• Add the blended tomato mixture• Fry uncovered, stirring occasionally until, all the water evaporates, oil starts floating on top, and the tomato taste is no longer raw ( 25-35 minutes).

    Season The Stew

    • Add the remaining Maggi cubes, white/black pepper, curry powder, thyme, bay leaves, and njansa (if using)• Stir well and let simmer for 5 minutes.

    Add Beef & Stock

    • Add cooked beef to the stew.• Pour in beef stock gradually until desired thickness.• Stir gently

    Taste, Adjust & Rest

    • Taste and adjust salt and pepper.• Let stew simmer on low heat until oil settles nicely on top.• Turn off heat and let rest 10-15 minutes

    Serve With

    • White Rice• Boiled or fried plantains• Bread• Sweet Potatoes• Yam• Garri• Cocoyam
