
Koki Beans & Ripe Plantains

Prepare the beans
• Wash cowpeas and soak in water for 30-45 minutes• Reb beans between your palms to remove the skins• Rinse repeatedly, skins will float while the beans sink• Drain the clean beans - 2
Grind the beans
• Blend beans with very little water until smooth and thick• Texture should not be watery ( Important ) - 3
Season the batter
• Pour bean paste into a large bowl• Add the blended onions, salt, maggi, pepper, crayfish, and shredded cocoyam leaves.• Mix very well - 4
Add Palm Oil
• Slowly pour in palm oil while mixing• Stir until batter turns deep orange/red• Taste and adjust salt if needed - 5
Wrap into bundles
• Koki is traditionally wrapped in banana leaves.• Wash your leaves and pass briefly over fire to soften• Scoop batter into the leaves• Fold tightly into a bundle and tie the top• If you do not have banana leaves, you can use bowls and cover tightly with foil - 6
Steam the Koki
• Line the bottom of a large pot with sticks or leaves• Add water into the pot• Arrange koki on top ( the koki should not touch the water )• Cover and steam on medium heat for about 2 hours• Check water level occasionally and refill - 7
Cook the ripe plantains
• Peel plantains and cut in halves• Place in a pot, add water to cover• Boil 15-20 minutes until soft• Drain - 8
Serving
• Serve 1 koki portion with 2 plantains• Optionally, add a fresh pepper sauce.
